Chicken liver fry recipe
Chicken liver fry is a simple stir fried liver fry sauteed using few basic spices and eaten plain or as a starter.

Ingredients
- 200grams chicken liver
- 2tsp Oil
- 1 Bay Leaf
- 1tsp Fennel Seeds / Saunf / Sombu
- 1 cinnamon sticksmall piece
- 1 onionslarge sliced thinly
- 6cloves garlicsliced
- 2 green chillichopped finely
- 2tsp coriander leaveschopped
- Lemon juice as needed
- salt to taste
Spice Powders
- 1tsp Turmeric Powder / Manjal Podi
- 1tsp Coriander Powder / Malli Podi
- 2tsp pepper powder
- 1tsp Cumin powder / Jeera podi
- 1tsp Garam masala powder
Instructions
- Take all the spice powders in a bowl. Add some water and make into a paste.
- Heat oil in a pan. Add in the bayleaf, fennel seeds, cinnamon and saute for a min.
- Add in onions, garlic, green chillies and saute for a min.
- Add in some salt and mix well.
- Now make a small space in the pan and add the spice mixture in and mix well till it gets cooked and oil separates from it.
- Now mix the spices with the onions.
- Now add in the liver and saute for 3 mins till it gets seared.
- Pour half cup of water and cover the pan.
- Cook for 5 to 10 mins till the liver is cooked.
- Now open the pan and increase the heat to a high and cook till all the water evaporates.
- Once it turns dry, add coriander leaves and some lemon juice.Toss well.
- Serve with rice.
